- 2 medium zucchini
- 1 teaspoon salt
- 1 egg
- 1/3 cup flour (or almond flour)
- 1/3 cup grated Parmesan cheese
- 1/2 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 green onion, finely sliced
- Shred zucchini and place it in a strainer over a towel. Sprinkle with salt and let it sit for 10-15 minutes to drain excess moisture.
- In a mixing bowl, combine egg, flour, Parmesan cheese, baking powder, garlic powder, Italian seasoning, and green onions.
- After draining, dry the shredded zucchini with the towel and add it to the mixture. Combine thoroughly.
- Preheat air fryer to 375°F (190°C) and lightly spray the basket with oil.
- Form patties from the mixture (about four) and place them in the air fryer basket in a single layer.
- Air fry for 10 minutes; flip and cook an additional 5 minutes until golden brown.
- Serve hot with sour cream or additional green onions if desired.
