  • 1 large leek, thinly sliced
  • 3 large carrots, thinly sliced
  • 3 stalks celery, thinly sliced
  • 6 cups chicken broth
  • 1 can (13.5 oz) coconut milk
  • 1 1/4 lbs boneless skinless chicken thighs or breasts
  • Spices: garlic, turmeric, poultry seasoning, salt, and pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, leeks, carrots, celery with salt until softened (about 14-16 minutes).
  2. Add garlic and spices; sauté until fragrant (2-3 minutes).
  3. Pour in chicken broth and coconut milk; add chicken. Bring to a simmer and cook until chicken is done (15-20 minutes).
  4. Remove chicken to shred; return to pot along with peas and parsley. Simmer for another 5 minutes.
  5. Adjust seasoning as needed before serving.
