  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar (cheesecake filling)
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 2 tbsp apple cider reduction from above
  • 1/4 cup granulated white sugar (for topping)
  • 1/4 tsp ground cinnamon (for topping)
  • 1/8 tsp ground nutmeg (for topping)
  • pinch ground allspice (for topping)
  • 12 tbsp salted butter, melted (for topping)

Instructions

  1. Prepare the apple cider reduction by simmering until it reduces by half; set aside to cool.
  2. For the cheesecake filling, beat together cream cheese, granulated sugar, and vanilla until smooth; refrigerate.
  3. In another bowl, whisk flour and spices. Cream together butter and sugars until fluffy; add egg yolks and vanilla. Gradually mix in dry ingredients and cooled apple cider reduction.
  4. Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined baking sheets. Press cheesecake filling into each ball before covering with more dough.
  5. Brush with melted butter and sprinkle with spiced sugar mixture. Bake for about 11 minutes or until golden around the edges.
