  • 1 tbsp flax seeds (ground)
  • 1 1/2 cups plant-based milk
  • 1 small banana
  • 1/2 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 3 apples (peeled and chopped)
  • 3 tbsp coconut sugar
  • 2 tbsp plant-based milk
  • 1/2 tbsp lemon juice
  • 1/2 tsp cornstarch
  • 1 tsp cinnamon
  • Oil (for frying)

Instructions

  1. In a mixing bowl, whisk together all dry ingredients: oat flour, rice flour, cornstarch, coconut sugar, flax seeds, and baking powder.
  2. Blend the wet ingredients (plant-based milk, banana, lemon juice, vanilla extract) until smooth and combine with dry ingredients.
  3. Allow the batter to rest while heating oil in a non-stick skillet over medium heat. Pour about 1/4 cup of batter into the skillet and cook for 2-4 minutes before flipping and cooking for another minute.
  4. For the filling, cook chopped apples with coconut sugar, plant-based milk, lemon juice, cornstarch, and cinnamon until softened.
  5. Fill each crepe with apple mixture, roll up gently, and serve warm.
