  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 head of garlic
  • 1 lemon, quartered
  • 1 tbsp honey
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the potatoes; par-boil them in salted water for about 6-8 minutes. Drain and let them steam dry.
  3. In a baking dish, combine par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper.
  4. Roast in the oven for 30-40 minutes until golden brown.
  5. Add feta cheese and squeeze half a lemon over the top; roast for an additional 15 minutes.
  6. Remove the garlic, squeeze out the roasted cloves, and mix with remaining lemon juice and chopped basil.
  7. Combine this mixture with the potatoes and feta; drizzle honey on top before serving.
