  • 2/3 cup cold butter (cubed)
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 4 eggs
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese (softened)
  • 2 cups blueberries

  1. Preheat your oven to 350°F (175°C) and prepare a springform pan by lining it with parchment paper.
  2. In a large bowl, combine flour, baking powder, salt, sugars, and lemon zest (optional). Mix well.
  3. Incorporate cold butter until the mixture resembles coarse crumbs.
  4. Add eggs and vanilla; blend until combined.
  5. Press two-thirds of the mixture into the prepared pan to form a crust and refrigerate.
  6. For the cheesecake filling, blend mascarpone, cream cheese, sugar, cornstarch, and eggs until smooth.
  7. Layer half of the cheesecake mixture over the crust, sprinkle with blueberries, then add remaining filling.
  8. Bake for about 65–75 minutes or until golden brown; allow to cool before removing from the pan.
