  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 onion (chopped)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 4 cloves garlic (minced)
  • 2 cups red apple vinegar
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season short ribs with salt and pepper, then brown on all sides for about 3-4 minutes each. Remove and set aside.
  3. Sauté chopped onion, carrots, and celery in the same pot until softened (5-7 minutes). Add minced garlic and cook for an additional minute.
  4. Deglaze the pot with red apple vinegar, scraping any browned bits. Stir in beef broth, tomato paste, dried thyme, bay leaves, salt, and pepper; bring to a simmer.
  5. Return short ribs to the pot. Cover with a lid and braise in the oven for about 3 hours or until meat is tender.
  6. Remove ribs from the pot; strain sauce if desired. Serve hot garnished with fresh parsley.
