  • 6 slices turkey bacon (chopped)
  • 4 large eggs
  • 3 cups cold cooked rice
  • 1 medium white onion (diced)
  • 2 cloves garlic (minced)
  • 3 tablespoons soy sauce
  • 1 cup frozen peas and carrots
  • ¼ tsp kosher salt
  • ¼ tsp ground pepper
  • 2 tbsp butter
  • 2 tsp toasted sesame oil
  • ½ cup frozen corn
  • 4 green onions (sliced)

Instructions

  1. In a large skillet or wok, cook chopped turkey bacon over medium heat until crispy. Remove and drain on paper towels.
  2. In a mixing bowl, beat eggs with salt and pepper. Scramble them in the same skillet until set and then set aside.
  3. Sauté diced onion in the remaining fat until translucent, then add minced garlic.
  4. Stir in cold cooked rice, frying for about 5 minutes until heated through.
  5. Add soy sauce, frozen peas, carrots, and mix well, cooking until veggies are warmed.
  6. Fold in crispy turkey bacon and scrambled eggs before serving.
