  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle pepper in adobo sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon lime juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup cooked rice
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the grill to medium-high heat. Season the chicken or steak with chili powder, cumin, salt, and black pepper. Grill for 2-3 minutes per side until fully cooked.
  2. In a bowl, combine diced tomatoes, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper to make pico de gallo.
  3. Whisk together mayonnaise, chipotle pepper in adobo sauce, minced garlic, lime juice, salt, and black pepper in a separate bowl to create chipotle aioli.
  4. Assemble by placing cooked rice in bowls and topping with grilled protein, pico de gallo, cilantro, and a drizzle of chipotle aioli.
