  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 oz.) packages cream cheese, softened
  • 1/2 cup sour cream
  • 3 large eggs
  • 2 cups granulated sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 tablespoon butter flavoring
  • 1/2 cup butterscotch sauce
  • 1/2 cup butterscotch chips
  • 8 oz. tub of Cool Whip

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl until combined. Press this mixture into the bottom of an 8-inch springform pan.
  3. In a large bowl, beat the cream cheese until smooth. Add sour cream, then gradually mix in sugar followed by eggs one at a time until fully incorporated.
  4. Stir in vanilla extract, butter flavoring, butterscotch sauce, cream soda, and butterscotch chips until blended.
  5. Pour the filling over the crust and smooth the top with a spatula.
  6. Bake for about 60 minutes or until edges are set and center is slightly jiggly.
  7. Turn off the oven and leave the cheesecake inside with the door ajar for an hour to cool down gradually.
  8. Refrigerate for at least four hours or overnight before serving topped with Cool Whip and extra butterscotch sauce.
