  • 1 cup all-purpose flour

  • 1 teaspoon vanilla extract
  • Oil for frying

Instructions

  1. Drain and chop the canned peaches; set aside. In a bowl, whisk together flour, baking powder, cinnamon, and salt.
  2. In another bowl, beat the egg and mix in milk and vanilla. Combine wet ingredients with dry ingredients until just mixed; fold in chopped peaches.
  3. Heat oil in a deep skillet over medium heat until it reaches 350°F (175°C).
  4. Drop spoonfuls of batter into hot oil; fry until golden brown on each side (about 2–3 minutes).
  5. Use a slotted spoon to remove fritters from oil and drain on paper towels. Dust with powdered sugar if desired.
