  • 2 cups macaroni (uncooked)
  • 1 small onion (diced)
  • ½ cup bell pepper (diced)
  • 3 cloves garlic (diced)
  • 1 packet chili seasoning mix
  • 8 oz tomato sauce
  • 14.5 oz can diced tomatoes
  • ½ cup chicken broth
  • 1½ cups cheddar cheese (shredded)

Instructions

  1. In a large skillet over medium heat, brown the ground beef using a wooden spoon.
  2. Add onions, bell peppers, and garlic; sauté until softened.
  3. Stir in chili seasoning mix, tomato sauce, diced tomatoes, chicken broth, and kidney beans; simmer for 10 minutes.
  4. Cook macaroni in boiling salted water until al dente; drain.
  5. In a saucepan, melt butter and whisk in flour to make a roux. Gradually add heavy cream and milk while stirring until smooth; season with mustard powder, onion powder, salt, pepper, and hot sauce.
  6. Combine cooked macaroni with chili mixture and cheese sauce in a large bowl.
  7. Transfer to a baking dish topped with remaining cheddar cheese; bake at 350°F for 20-25 minutes or until bubbly and golden.
  8. Serve hot garnished with fresh parsley.
