Ingredients

Scale
  • 3 ripe bananas
  • 1/3 cup natural peanut butter
  • 1/2 cup dark chocolate chips
  • 2 teaspoons coconut oil

Instructions

  1. Peel and slice the bananas into rounds about 1/4 inch thick. Line a baking sheet with parchment paper.
  2. Place approximately 1/2 teaspoon of peanut butter on one banana slice and top it with another slice to create a mini sandwich. Repeat until all slices are used (about 30 bites). Freeze for 1 hour.
  3. Melt dark chocolate chips with coconut oil in a microwave-safe bowl, stirring every 30 seconds until smooth.
  4. Dip each frozen banana bite halfway into the melted chocolate and return them to the parchment-lined baking sheet.
  5. Freeze again for about 15 minutes to harden the chocolate coating.
