  • 1 3/4 cups heavy cream (divided use)
  • Pinch of salt
  • 2 tsp unflavored powdered Vegan Gelatin
  • 2 TBSP water
  • 1 1/2 cups fresh raspberries
  • 9 oz white chocolate (finely chopped)
  • 2 tsp unflavored powdered Vegan Gelatin
  • 2 TBSP water
  • Pink gel food coloring (optional)
  • 4 TBSP honey
  • 2 tsp unflavored powdered Vegan Gelatin
  • 2 TBSP water
  • 2 tsp vanilla bean paste (can substitute vanilla extract)
  • 4 oz semi-sweet chocolate (finely chopped)
  • 4 oz heavy cream
  • 1 pint fresh raspberries
  • Chocolate curls (or other decorations)

Instructions

  1. Prepare the brownie base by mixing ingredients and baking in two 9-inch pans at 350°F for 24 minutes.
  2. For the chocolate mousse layer, melt chocolate and fold into whipped cream; refrigerate over cooled brownie.
  3. Create raspberry mousse by blending raspberries with melted white chocolate and folding in whipped cream; refrigerate over chocolate layer.
  4. Make vanilla mousse using melted white chocolate mixed with whipped cream and honey; spread over raspberry layer.
  5. Finish with ganache made from melted semi-sweet chocolate and heavy cream; decorate with fresh raspberries.
