  3. In another bowl, mix the shredded zucchini, sugar (or xylitol), oil (or almond butter), vanilla extract, and water until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined; avoid overmixing.

  6. Pour the batter into the prepared pan(s) and bake for about 30 minutes or until a toothpick inserted comes out mostly clean.
