  • 2 to 3 tablespoons cinnamon sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare mini loaf pans by greasing them and lining with parchment paper.
  2. In a mixing bowl, whisk together the egg, granulated sugar, brown sugar, canned pumpkin, canola oil, and vanilla extract until smooth.
  3. In another bowl, sift together the flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually mix into the wet ingredients until just combined.
  4. Divide the batter among prepared pans and sprinkle with cinnamon sugar. Use a toothpick to swirl it gently into the batter.
  5. Bake for 28-30 minutes or until a toothpick comes out clean. Allow to cool before removing from pans.
