  • 4 ounces cheddar cheese (cubed)
  • 2 hard-boiled eggs (finely diced)
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons sweet pickle juice
  • 1 tablespoon cider vinegar
  • 1 tablespoon granulated sugar
  • 2 teaspoons Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni pasta in a large pot of salted boiling water until al dente. Drain and rinse with cold water. Toss with olive oil to prevent sticking.
  2. In a large mixing bowl, combine the cooked pasta with red bell pepper, celery, red onion, gherkins, cheddar cheese, and hard-boiled eggs.
  3. In another bowl, whisk together mayonnaise, sour cream, pickle juice, cider vinegar, sugar, Dijon mustard, salt, and pepper until smooth.
