  • 2 diced carrots
  • 2 diced celery stalks
  • 1 diced medium onion
  • 4 oz chopped turkey strips
  • 1 can whole plum tomatoes (28 oz)
  • 1 can cannellini beans
  • 3/4 cup ditalini pasta
  • 4 cups chicken broth
  • Fresh basil
  • Bay leaves
  • Oregano
  • 2 tbsp olive oil

Instructions

  1. In a large pot or Dutch oven over medium heat, sauté the chopped turkey strips until crispy (about 8 minutes). Add the olive oil, carrots, celery, and onion; cook until softened (approximately 10 minutes). Stir in half of the salt, pepper, and oregano.
  2. Create a well in the vegetables; add tomato paste and let it caramelize for 3 minutes before mixing it in.
  3. Pour the crushed tomatoes into the pot along with basil and remaining seasonings; bring to a simmer.
  4. Add chicken broth and parmesan rind; boil then reduce heat to simmer for 15 minutes.
  5. Stir in cannellini beans and ditalini pasta; simmer for another 15 minutes until the pasta is tender.
  6. Lastly, incorporate chopped spinach; cover for 3 minutes before serving.
