  • 2 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 3 ½ cups cake flour
  • 1 Tablespoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup whole milk
  • ¾ cup chopped Oreo cookies
  • 1.5 quarts Cookies and Cream ice cream, softened
  • 2 cups whipped cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a large bowl, cream together softened unsalted butter and granulated sugar until light and fluffy. Add vanilla extract and mix well.
  3. In another bowl, combine cake flour, baking powder, and salt. Gradually mix into the butter mixture, alternating with whole milk until just combined.
  4. In a separate bowl, whip egg whites until stiff peaks form. Gently fold into the batter.
  5. Divide the batter between the prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Let cool completely.
  6. Assemble by placing one layer of cake on a serving platter, spreading half the softened ice cream over it, sprinkling with half of the chopped Oreo cookies, then topping with the second layer of cake.
  7. Frost the top with whipped cream and garnish with remaining Oreo cookies.
  8. Freeze for at least four hours before serving.
