  • 1 cup + 1 tablespoon sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/4 cups fresh whole cranberries
  • 1/2 cup milk
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3.4-ounce box instant pistachio pudding mix
  • 1/4 cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a stand mixer, cream together the softened butter and sugar until light and fluffy.
  3. Beat in eggs and vanilla extract until fully combined.
  4. In a food processor, coarsely chop cranberries with a tablespoon of sugar then add to the mixture.
  5. In another bowl, whisk together flour, baking powder, salt, and pistachio pudding mix.
  6. Gradually add half of the dry mixture to the wet ingredients followed by milk; mix briefly.
  7. Fold in remaining dry ingredients and chopped pistachios just until combined.
  8. Pour batter into the prepared loaf pan and smooth out the top.
  9. Bake for 55-65 minutes or until a toothpick inserted comes out clean.
  10. Let cool in the pan before transferring to a cooling rack.
