  • ½ lb crumbled sausage (chicken or turkey)
  • 4 garlic cloves, minced
  • 6 oz spinach
  • 1 cup heavy cream (or plant-based cream)
  • ⅓ cup Parmesan cheese, shredded
  • 8 oz farfalle pasta

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss the cubed butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25-30 minutes until tender.
  3. While roasting, boil salted water in a large pot. Cook farfalle pasta according to package instructions until al dente; drain and set aside.
  4. In a skillet over medium heat, add olive oil and crumbled sausage. Cook until browned, then stir in minced garlic for 1-2 minutes.
