  • 1/2 cup gluten-free breadcrumbs

  • 1 egg, beaten
  • Cooking spray
  • 3 tablespoons olive oil

Instructions

  1. Wash and dry the zucchinis. Cut them into strips about 6 to 7 inches long.
  2. Place the zucchini strips on a paper towel-lined baking sheet and sprinkle with salt. Let sit for at least 20 minutes to draw out moisture.
  3. In a mixing bowl, combine gluten-free breadcrumbs, nutritional yeast, granulated garlic, dried parsley, and salt.
  4. Dip each zucchini stick in the beaten egg and then coat with the breadcrumb mixture.
  5. Preheat the air fryer to 400°F (about 5 minutes). Spray the basket with cooking spray.
