  • 8 ounces elbow pasta
  • 1/2 cup dill pickle juice
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 teaspoon Sriracha (or hot sauce)
  • Salt and black pepper (to taste)
  • 1 cup cheddar cheese (diced)
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 3 tablespoons white onion (finely chopped)

Instructions

  1. Cook the elbow pasta in boiling water until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine cooked pasta with half of the dill pickle juice and let sit for 5 minutes before draining excess liquid.
  3. In another bowl, mix mayonnaise, sour cream, remaining dill pickle juice, Sriracha, salt, and pepper until smooth.
  4. In a large bowl, combine the drained pasta with cheddar cheese, sliced pickles, fresh dill, and onion. Pour dressing over the mixture and toss gently to coat.
  5. Cover and refrigerate for at least 4-6 hours before serving.
