  • 1 kg green unripe tomatoes
  • 500 g cooking apples
  • 500 g diced onions
  • 200 g sultanas
  • 1 tsp chili flakes
  • 15 g fresh ginger (grated)
  • 2 tsp salt
  • 400 ml apple cider vinegar
  • 400 g light brown sugar
  • 2 tsp coriander seeds
  • 2 tsp mustard seeds
  • 2 tsp black peppercorns

Instructions

  1. Dice green tomatoes, onions, and apples into uniform pieces.
  2. In a large preserving pan, combine diced tomatoes, onions, apples, sultanas, chili flakes, salt, grated ginger, and apple cider vinegar. Stir well before adding sugar.
  3. Create a spice bag with coriander seeds, mustard seeds, and black peppercorns and add it to the mixture.
  4. Bring to a boil over medium heat; then reduce to low and simmer for 1½ to 2 hours while stirring occasionally.
  5. Check consistency by drawing a spoon through the chutney; it should part easily.
  6. Remove the spice bag and ladle hot chutney into sterilized jars.
  7. Seal jars tightly and allow them to cool before storing.
