  • 2 tablespoons canola oil
  • Zest and juice of 1 large lime
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 clove garlic, chopped
  • 1 jalapeño, chopped (seeds removed for less heat)
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large red onion

Instructions

  1. Prepare the marinade by combining canola oil, lime juice, lime zest, chili powder, cumin, garlic, jalapeño, and salt in a mixing bowl.
  2. Cut chicken into bite-sized pieces and place in a zip-top bag. Pour marinade over chicken, seal the bag tightly, and refrigerate for at least 30 minutes or up to overnight.
  3. Preheat grill to medium-high heat. Soak wooden skewers in water if using.
  4. Cut bell peppers and onion into chunks. Thread marinated chicken pieces onto skewers alternating with vegetables.
  5. Grill kebabs for about 6 to 8 minutes, turning occasionally until chicken is fully cooked (165°F internal temperature).
  6. Serve warm with fresh cilantro and additional lime juice.
