  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup crushed peppermint candies (divided)
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Melt the unsalted butter in a microwave-safe bowl and let it cool slightly.
  3. In a mixing bowl, combine the melted butter and granulated sugar, mixing until smooth. Add eggs and vanilla extract, blending until well combined.
  4. In another bowl, whisk together flour, cocoa powder, and salt. Gradually add this to the wet mixture, stirring gently until just combined.
  5. Fold in half of the crushed peppermint candies and optional chocolate chips.
  6. Pour the batter into the prepared pan, spreading evenly and topping with remaining crushed peppermint candies.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out with moist crumbs.
  8. Allow brownies to cool completely before cutting into squares.
