  • ½ cup unsalted butter
  • 2⅔ cups flour
  • 2 tsp ground ginger
  • 1½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ cup brown sugar
  • ½ cup sour cream (or plain yogurt)
  • ½ cup whole milk
  • 1 large egg
  • Coarse sugar (for sprinkling)
  • For the glaze: ½ cup powdered sugar, lemon juice

Instructions

  1. Preheat your oven to 425°F and prepare a muffin tray with cooking spray.
  2. In a large bowl, melt molasses and butter in the microwave; stir until combined and cool slightly.
  3. In another bowl, whisk together flour, ground ginger, baking soda, cinnamon, and salt.
  4. Mix brown sugar, sour cream (or yogurt), milk, and egg into the molasses mixture until well blended.
  5. Gradually add the dry ingredients to the wet mixture; stir until just combined.
  6. Fill muffin trays to the top with batter; sprinkle coarse sugar on top if desired.
  7. Bake for five minutes at 425°F, then reduce temperature to 350°F and continue baking for 11–14 minutes or until a toothpick comes out clean.
  8. Cool muffins in the pan briefly before transferring to a wire rack.
  9. For the glaze, mix powdered sugar with lemon juice until creamy; drizzle over cooled muffins.
