Green Tomato Chow Chow is a vibrant, tangy relish that captures the essence of summer in every bite. This homemade condiment combines fresh green tomatoes, crisp cabbage, and colorful peppers with a zesty vinegar mixture, making it an ideal accompaniment for sandwiches, grilled meats, or even as a dip.

Ingredients

  • 1 gallon green tomatoes
  • 1 medium head cabbage
  • 5 medium bell peppers (mix of red and green)
  • 1 medium onion
  • 6 pods hot pepper
  • 3 cups vinegar
  • 2 cups sugar
  • 2 tablespoons plain salt

Instructions

  1. Chop the green tomatoes and add them to a large pot.
  2. Shred the cabbage, seed and chop the peppers, and chop the onion before adding all to the pot with salt; stir well.
  3. In a separate pot, combine vinegar and sugar; bring to a boil.
  4. Pour the boiling mixture over the vegetables; cook together for about 20 minutes.
  5. Pour into sterilized jars and process in boiling water for 10 minutes.
  6. Allow to sit for at least four weeks before enjoying.
