  • 8 cups green tomatoes (chopped)
  • 3 tbsp coarse salt
  • 2 cups white sugar
  • 2 cups white vinegar
  • 1 tsp turmeric
  • 1/2 tsp celery seed
  • 3 tbsp mustard seed
  • 3 cups white onions (diced)
  • 2 sweet red peppers (diced)
  • 1 jalapeno pepper (diced, optional)

Instructions

  1. Wash and chop the green tomatoes into small pieces. Place them in a large bowl with coarse salt for about an hour to draw out moisture.
  2. Drain the salted tomatoes and combine them in a large pot with sugar, vinegar, turmeric, celery seed, mustard seed, diced onions, sweet red pepper, and optional jalapeno. Mix well.
  3. Heat the mixture over medium heat until boiling; then reduce heat and simmer for about 15 minutes or until slightly thickened.
  4. Ladle the hot relish into sterilized canning jars, leaving about 1/4 inch headspace at the top. Seal tightly with lids.
  5. For longer storage, process jars in a boiling water bath for about 10 minutes before cooling completely.
