  • 1 1/2 lbs boneless skinless chicken thighs
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 3 cloves garlic
  • 2 tsp ground cumin
  • 1 1/2 tsp ancho chili powder
  • Fresh cilantro
  • 12 mini corn taco shells, warmed
  • 1 large avocado, cored and sliced
  • 1 small red or yellow onion, chopped
  • 3 Tbsp chopped cilantro
  • Lime wedges, for serving (optional)

Instructions

  1. In a gallon-size resealable bag, combine chicken thighs and marinade ingredients (lime juice, olive oil, garlic, cumin, ancho chili powder, cilantro, salt, and pepper). Seal and marinate for at least 1 hour.
  2. Preheat the grill to medium-high heat (425 – 450 degrees).
  3. Grill the marinated chicken for about 5-6 minutes per side until cooked through.
  4. Let the chicken rest for 5 minutes before slicing into cubes.
  5. Assemble tacos by placing diced chicken in warmed corn taco shells and topping with avocado slices, chopped onions, and additional cilantro.
