  • 3 tablespoons olive oil
  • 100 ml lime juice (freshly squeezed)
  • 2 tablespoons cilantro (chopped)
  • 2 cloves garlic (crushed)
  • 1 teaspoon brown sugar
  • 3/4 teaspoon red chili flakes
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 yellow bell pepper (deseeded and sliced)
  • 1/2 red bell pepper (deseeded and sliced)
  • 1/2 onion (sliced)
  • 5 cups Romaine lettuce (washed and dried)
  • 2 avocados (sliced)
  • Fresh cilantro (for garnish)

Instructions

  1. Prepare the marinade by whisking together olive oil, lime juice, cilantro, crushed garlic, brown sugar, red chili flakes, ground cumin, and salt in a mixing bowl.
  2. Coat the chicken fillets in half of the marinade and let them marinate for at least two hours in the refrigerator.
  3. Heat olive oil in a grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes per side until cooked through (165°F internal temperature). Allow it to rest before slicing.
  4. Sauté sliced bell peppers and onion in the same pan until tender.
  5. In a large bowl, combine Romaine lettuce, avocado slices, sautéed vegetables, and grilled chicken strips. Drizzle with reserved marinade before serving.
