  • 1 3/4 lb boneless, skinless chicken breast
  • 3 cups fresh cubed pineapple
  • 1 1/2 large green peppers
  • 1 large red onion
  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil (divided, plus more for brushing grill)
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves (minced)
  • 1 Tbsp minced ginger
  • 1/2 tsp sesame oil
  • Salt and freshly ground black pepper

Instructions

  1. Make the marinade by whisking together ketchup, brown sugar, soy sauce, pineapple juice, 2 Tbsp olive oil, rice vinegar, minced garlic, ginger, sesame oil, salt, and pepper in a mixing bowl.
  2. Place chopped chicken in a resealable bag; reserve 1/2 cup of marinade for later use. Pour remaining marinade over chicken and refrigerate for at least one hour.
  3. Preheat grill to medium heat (400°F). Toss diced onion, green pepper, and cubed pineapple with olive oil; season with salt and pepper.
  4. Assemble kebabs by threading the marinated chicken pieces along with vegetables onto skewers.
  5. Grill kebabs for about 5 minutes on each side or until chicken reaches an internal temperature of 165°F.
