  • ½ cup granulated sugar
  • 1 ½ cups egg whites (about 12)
  • ¼ teaspoon salt
  • 1 ¼ teaspoon cream of tartar
  • ¼ teaspoon clear vanilla extract
  • 1 teaspoon almond extract
  • 1 ⅓ cups granulated sugar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sift together cake flour and ½ cup granulated sugar four times to aerate.
  3. In a large metal bowl, beat egg whites, salt, cream of tartar, clear vanilla, and almond extract until soft peaks form.
  4. Gradually add in the remaining 1 ⅓ cups of granulated sugar while continuing to beat until stiff peaks form.
  5. Gently fold the sifted flour mixture into the egg whites in four additions.
  6. Pour the batter into an ungreased 10-inch tube pan without scraping.
  7. Bake for about 30-35 minutes until golden brown and springy to touch.
  8. Cool upside down in the pan before removing.
