Ingredients

Scale
  • 4 lbs apples (about 10 small-medium apples)
  • ½ cup apple juice (or cider)
  • 1 Tbsp lemon juice
  • 1 cup light brown sugar
  • 2 tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp salt

Instructions

  1. Core and chop the apples into chunks, optionally peeling them for better texture.
  2. In a large stock pot, combine the chopped apples with apple juice, lemon juice, brown sugar, cinnamon, cloves, and salt. Stir until mixed.
  3. Cover and simmer over medium-low heat for about 1-2 hours until the apples are very soft.
  4. Use an immersion blender to puree the mixture directly in the pot until smooth. Alternatively, transfer batches to a regular blender before returning to the pot.
  5. Continue cooking for another 30-60 minutes until thickened and deep brown in color.
  6. Spoon hot apple butter into jars and let cool before sealing. Refrigerate for up to three weeks or use canning methods for longer storage.
