  • 2 Tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 3 cups shredded sweetened coconut
  • 15 ounces soft caramels
  • 3 Tablespoons whole milk
  • 8 ounces dark chocolate

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the unsalted butter and sugar until light and fluffy. Gradually mix in flour, baking powder, and salt until well combined. Stir in milk and vanilla extract until you form a dough.
  3. Roll out the dough on a floured surface to about 1/4-inch thickness. Use your cookie cutter to cut out shapes and place them on the prepared baking sheet.
  4. Bake for 12-15 minutes or until lightly golden. Allow cookies to cool completely on a wire rack.
  5. In a saucepan over medium heat, melt soft caramels with whole milk and salt until smooth. Stir in shredded coconut until fully coated.
  6. Spread the coconut-caramel mixture over each cooled cookie.
  7. Melt dark chocolate using a double boiler or microwave, then drizzle over each topped cookie.
