  • 1 lb chicken sausage
  • 1/2 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef stock
  • 1 cup water
  • 1/4 tsp Italian seasoning
  • 10 sheets dry lasagna pasta, broken in pieces
  • 1 to 2 tbsp fresh basil, torn
  • Salt and pepper, to taste
  • Ricotta cheese
  • Grated parmesan cheese
  • Shredded mozzarella cheese

Instructions

  1. In a large pot over medium heat, brown the chicken sausage until cooked through.
  2. Add chopped onion and minced garlic; sauté until onions are translucent.
  3. Stir in crushed tomatoes, beef stock, water, and Italian seasoning; mix well.
  4. Bring to a boil, then reduce heat to low and add broken lasagna pieces. Simmer uncovered for about 20 minutes until noodles are tender.
  5. Stir in fresh basil and season with salt and pepper to taste before serving with dollops of ricotta cheese and toppings of parmesan and mozzarella.
