  • 2 large honey crisp apples, peeled and diced small
  • 3 tablespoons salted butter
  • 2 tablespoons fruit juice
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 18 oz fresh blackberries
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Make the Pie Crust: Combine flour, sugar, and salt in a stand mixer. Add cold butter and mix until crumbly. Gradually add ice water until clumps form; chill the dough for at least one hour.
  2. Prepare the Fillings: Sauté diced apples in butter, then add fruit juice, vanilla, cinnamon, and brown sugar until syrupy. For blackberries, roast them and simmer with sugar and vanilla until thickened.
  3. Roll Out Dough: On a floured surface, roll out chilled dough to 1/8 inch thick. Cut out shapes using a pumpkin cookie cutter and refrigerate.
  4. Assemble Pies: Place filling on uncut dough shapes, cover with cutouts featuring jack-o-lantern faces, seal edges well with a fork, then brush with egg wash and sprinkle sugar.
  5. Bake: Preheat oven to 375°F (190°C) and bake for about 25 minutes or until golden brown.
