  • 2 tablespoons olive oil
  • 2 small onions (chopped)
  • 1 red bell pepper (chopped)
  • 23 jalapeno peppers (chopped – optional)
  • 2 stalks celery (chopped)
  • 6 cloves garlic (chopped)
  • 1 pound boneless, skinless chicken breast (chopped)
  • ½ pound shrimp (peeled and deveined)
  • 34 tomatoes (chopped – about a pound)
  • 1 tablespoon Cajun seasoning
  • 8 ounces tomato sauce
  • 1 cup chicken stock
  • 1 cup white rice

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onions, bell pepper, celery for about 6-7 minutes until softened. Add garlic and then the chicken; stir frequently until the chicken is cooked through.
  2. Stir in chopped tomatoes and Cajun seasoning, cooking for another 3 minutes. Mix in tomato sauce and chicken stock.
  3. Add rice and bring to a boil, then reduce heat to simmer. Cover and let cook for 25-30 minutes until rice is tender.
  4. In a separate pan, sauté seasoned shrimp over medium heat until fully cooked. Gently mix into the Jambalaya before serving.
