  • Leinsamen (flaxseeds)
  • Vegan butter or coconut oil
  • Apples
  • Firm tofu
  • Cashews
  • Coconut milk
  • Maple syrup

Instructions

  1. Preheat your oven to 180 °C (350 °F). Prepare the crust by mixing flour, ground almonds, flaxseed eggs, vegan butter, sugar, and salt. Press into a springform pan.
  2. For the apple filling, cook diced apples with water and lemon juice until soft. Mix in sugar, cornstarch, cinnamon, and spices. Let cool.
  3. Blend tofu, soaked cashews, coconut milk, maple syrup, lime juice, cornstarch, and vanilla until smooth for the cheesecake layer.
  4. Spread the apple filling over the crust followed by the cheesecake mixture. Bake for approximately 45 minutes.
  5. Allow to cool completely before serving.
