  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 2 pounds lean ground beef (or mix with chicken/turkey)
  • 1/2 cup milk
  • 2 large eggs
  • ¾ cup breadcrumbs
  • 3/4 cup ketchup (plus additional for glaze)
  • 1/4 cup brown sugar (packed)
  • 2 tablespoons apple cider vinegar
  • Italian seasoning
  • salt
  • black pepper
  • fresh parsley

Instructions

  1. Preheat the oven to 350°F.
  2. Sauté chopped onions in melted butter until softened, then add minced garlic.
  3. In a mixing bowl, combine sautéed onions and garlic with ground beef, milk, eggs, breadcrumbs, ketchup, Italian seasoning, salt, black pepper, and parsley. Mix well.
  4. Shape the mixture into a loaf in a loaf pan and bake for about 40 minutes.
  5. Prepare the glaze by whisking together ketchup, brown sugar, and apple cider vinegar; spoon over meatloaf after initial baking.
  6. Bake for an additional 20–30 minutes until cooked through.
  7. Let it rest for 10 minutes before slicing.
