  • 8 small boneless chicken thighs (approximately 650g)
  • 2 cloves garlic
  • 1 jalapeño pepper
  • 3 tablespoons tomato paste
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1/2 teaspoon oregano
  • Juice of half a lime
  • Salt and black pepper
  • Assorted bell peppers (red, green, yellow) and onion

Instructions

  1. Prepare the marinade by blending garlic, jalapeño, tomato paste, cumin, paprika, oregano, lime juice, salt, and pepper in a mini food processor until smooth.
  2. Cut chicken into bite-sized pieces. Toss chicken in the marinade until well coated; refrigerate for at least 2 hours or overnight.

  4. Grill on medium heat for about 15 minutes or bake in the oven at 220°C (425°F) for 25-30 minutes until cooked through.
