Ingredients

  • Romaine lettuce
  • English cucumber
  • Yellow bell pepper
  • Grape or cherry tomatoes
  • Fresh corn
  • Red onion
  • Avocado
  • Fresh cilantro
  • Olive oil
  • Sherry vinegar
  • Maple syrup
  • Dried oregano
  • Water
  • Salt
  • Black pepper

Instructions

  1. Microwave the corn on the cob (in husks) for 5 minutes; allow to cool.
  2. Remove husk and cut kernels off the cob.
  3. In a large bowl, combine corn with chopped lettuce, cucumber, bell pepper, tomatoes, onion, avocado, and cilantro.
  4. In a small bowl, whisk together olive oil, sherry vinegar, maple syrup, oregano, water; season with salt and pepper.
