  • 60 g powdered sugar
  • 115 g unsalted butter, cold and cubed
  • 1 egg yolk
  • 1 medium apple, peeled and diced
  • 80 g mixed berries (fresh or frozen)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon

Instructions

  1. Prepare the crust by mixing flour and powdered sugar, then incorporating cold butter until crumbly. Add egg yolk and mix until combined; chill for 30 minutes.
  2. Preheat the oven to 180°C (350°F).
  3. For the filling, combine diced apple, berries, sugar, lemon juice, cinnamon, and cornstarch; let sit for 10 minutes.
  4. Roll out chilled dough and cut circles to fit your pie dish or muffin tin.
  5. Assemble by placing dough in the dish and spooning in the fruit filling.
  6. Bake for 25–30 minutes until golden brown.
