  • 2 cups chocolate wafer cookies, crushed
  • 1/2 cup unsalted butter, melted
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 tsp peppermint extract
  • 1 cup mini chocolate chips
  • Optional: 1/2 cup semi-sweet chocolate chips
  • Optional: 1/4 cup heavy cream

Instructions

  1. Combine crushed chocolate cookies with melted butter in a bowl. Press into a 9×13-inch dish to form the base. Chill.
  2. Beat cream cheese until smooth; gradually mix in powdered sugar and peppermint extract. Fold in whipped cream and mini chocolate chips.
  3. Layer half of the mint filling over the crust. If using, drizzle melted ganache on top before adding another layer of crust and mint filling.
  4. Spread whipped topping over the final layer and garnish with chocolate shavings and extra chocolate chips.
  5. Chill for at least 4 hours before slicing and serving.
