  • 8 ounces mozzarella cheese (cut into cubes)
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter (melted)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar; let it sit until foamy (about 5 minutes).
  2. In another bowl, whisk together flour and salt. Gradually add to the yeast mixture until combined.
  3. Knead the dough by hand on a floured surface for about 8 minutes until smooth or use a stand mixer with a dough hook for about 5 minutes.
  4. Mix in chopped rosemary and grated Parmesan, then form into a ball and let rise in a greased bowl covered with a towel for about an hour or until doubled in size.
  5. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Punch down the dough, divide into eight pieces, flatten each piece, place mozzarella cube inside, seal it up, then roll into pretzel shape.
  7. Boil water with baking soda; drop each pretzel carefully into boiling water for about 30 seconds before removing to drain on paper towels.
  8. Brush with melted butter and sprinkle with coarse sea salt before baking for 12-15 minutes or until golden brown.
