  • 8 oz Cool Whip (for ice cream layers)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, and baking soda. Mix well.
  3. Add egg, buttermilk, vegetable oil, and vanilla extract. Mix until combined. Stir in boiling water until smooth.
  4. Divide batter into prepared pans and bake for 30–35 minutes or until a toothpick comes out clean. Cool completely.
  5. For the strawberry layer: Beat cream cheese with sugar; mix in milk and strawberry extract. Fold in Cool Whip.
  6. Spread the strawberry mixture over one cooled cake layer; top with the second cake layer.
  7. For the vanilla layer: Repeat using cream cheese with sugar, milk, vanilla bean paste, and Cool Whip.
  8. Spread vanilla mixture on top and chill for at least four hours or overnight.
  9. Prepare whipped topping by beating heavy cream with powdered sugar until stiff peaks form; spread over chilled cake.
