  • 3 1/2 cups all-purpose flour
  • 1 1/4 cups superfine sugar
  • 3 tsp baking powder
  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup vegetable oil
  • 2 tbsp Greek yogurt (or sour cream)
  • 1 tsp vanilla extract
  • Cocoa powder and strawberry essence for flavoring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract.
  3. In another bowl, whisk together flour, baking powder, salt, and cocoa powder.
  4. Gradually add dry ingredients to the wet mixture alternating with milk until just combined.
  5. Divide batter into three bowls; color one pink with strawberry essence and food dye, another with cocoa for chocolate flavor, and leave one plain for vanilla.
  6. Fill cupcake liners two-thirds full with each batter flavor; swirl slightly if desired.
  7. Bake for about 18–20 minutes until a skewer comes out clean. Let cool completely.
  8. Frost with your choice of buttercream flavored with cocoa or strawberry essence and decorate as desired.
