  • 2 ears grilled corn (optional)
  • 1 English cucumber
  • 1 red bell pepper
  • 1 pint cherry tomatoes
  • 1 can garbanzo beans (chickpeas)
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup feta cheese
  • 1/2 red onion (chopped)
  • 1/3 cup extra virgin olive oil
  • 2 tbsp red apple vinegar
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill
  • 1 tbsp fresh parsley
  • 1 tbsp fresh oregano
  • 1 tsp sugar
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 1/4 tsp salt

Instructions

  1. Prepare the dressing by whisking olive oil, lemon juice, vinegar, herbs, mustard, sugar, garlic powder, salt, and pepper in a jar; refrigerate.
  2. In a large skillet over medium-low heat, melt butter with olive oil. Add orzo and chopped red onion; sauté for about 3–5 minutes.
  3. Stir in chicken broth and simmer until orzo is al dente (8–10 minutes). Drain excess liquid if necessary and cool in the refrigerator.
  4. Once cooled, mix cooked orzo with prepared vegetables and dressing; toss gently.
