  • 3 quarts firm green cherry tomatoes
  • 9 cloves garlic
  • 6 teaspoons pickling spice
  • 1/4 teaspoon black peppercorns
  • 1 1/2 teaspoons red pepper flakes
  • 12 sprigs fresh dill
  • 6 slices jalapeno peppers
  • 3 cups white vinegar (5%)
  • 1 cup apple cider vinegar (5%)
  • 2 cups filtered water
  • 4 tablespoons sugar
  • 2 tablespoons pickling salt

Instructions

  1. Prepare jars by placing garlic, pickling spice, red pepper flakes, dill, and jalapenos in each.
  2. Pack the firm green cherry tomatoes tightly in the jars after making small punctures in each.
  3. Boil the brine using vinegars, water, sugar, and salt until dissolved.
  4. Fill jars with hot brine using a funnel, leaving about ¼ inch headspace.
  5. Remove air bubbles with a chopstick and seal jars with lids.
  6. Cool at room temperature before refrigerating for at least seven days for best flavor development.
