  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose/light corn syrup
  • few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare a baking sheet by greasing a piece of baking paper and placing it on the tray.
  2. Insert bamboo skewers into each apple.
  3. In a saucepan over medium heat, combine sugar, water, corn syrup, and black food coloring; stir until dissolved.
  4. Stop stirring once dissolved; use a wet brush to wash down any sugar crystals from the pot's sides.
  5. Cook until the caramel reaches 150ºC (310ºF) for hard crack stage, or test by dropping some into cold water.
  6. Dip each apple into the caramel mixture for even coverage and place on the baking sheet to cool completely.
